The story
Kachumbari is the fresh tomato-onion-chili salad that sits on every Rwandan, Ugandan, Kenyan and Tanzanian table alongside every grilled meat, stew and rice dish: ripe tomato, thin-sliced red onion, fresh green or bird's-eye chili, chopped fresh coriander, tossed with fresh lime juice, a splash of oil and salt. The finished salad is bright, sharp, and cuts through the richness of grilled meats, coconut fish stews and starchy staples (matoke, ugali, rice). Every East African meal that includes protein has kachumbari as a side.
Method
Peel and halve the red onion. Slice as thinly as possible (a mandoline helps). The finer the slice, the better the salad.
Place the sliced onion in a bowl. Cover with cold water 30 seconds. Drain and pat dry. This removes the raw sulfur bite while keeping the crunch.
Halve and deseed the tomatoes (this stops the salad from turning watery). Dice into 5mm pieces.
Deseed the chilies if you want mild heat (leave the seeds for full heat). Chop very fine. Chop the coriander.
In a mixing bowl, combine the drained onion, tomatoes, chilies and coriander. Add cucumber and green pepper if using.
Add lime juice, oil, salt, pepper, sugar and vinegar (if using). Toss gently with your hands or a wooden spoon.
Rest at cool room temperature 5 to 10 minutes so the flavours marry and the onion softens into the lime.
Transfer to a serving bowl. Serve alongside brochettes, tilapia, isombe, ugali, matoke or any grilled meat. Best within 1 hour; loses crunch and freshness after 2 hours.
Tips
- Deseed the tomatoes. Kachumbari with seeds turns watery within 20 minutes. Halving and removing seeds keeps it crisp.
- Rinse the onion. Thirty seconds in cold water removes the raw bite while keeping the crunch. Not optional.
- Fresh lime, not bottled. The acidity of freshly-squeezed lime is what makes the salad classical. Bottled lime juice tastes flat.
- Adjust chili to taste. Two green chilies is medium heat; add a bird's-eye for fire. Serve extra sliced chilies on the side for guests who want more.
- Serve fresh. Kachumbari holds 2 hours max. Assemble to order or 15 minutes before serving.
