The story

Hainanese chicken rice is Singapore's most-loved hawker dish and arguably the country's most-representative food: a whole chicken poached slowly at a bare simmer with ginger and spring onion until the flesh is silky and just-cooked, plunged into ice water to gel the skin, then rested and jointed. Fragrant rice is cooked in the poaching broth with ginger, garlic and rendered chicken fat until every grain is glossy and infused. Served on a plate with slices of chicken over cucumber, a small bowl of the poaching broth (still hot, garnished with spring onion and coriander), and three sauces: dark soy, ginger-scallion oil, and a fierce chili-garlic-lime dip. Sold at every hawker centre in the country; Tian Tian in Maxwell Food Centre and Chatterbox at Mandarin Orchard are the most-quoted addresses.

Method

  1. Rinse the chicken inside and out. Rub the salt into the skin and cavity. Stuff the cavity with the ginger and spring onions.

  2. Place the chicken breast-down in a large pot. Add enough cold water to just cover. Bring slowly to a bare simmer over medium heat — small bubbles rising but no rolling boil. Skim any foam.

  3. Reduce heat to the lowest setting. Poach at 80C (steam rising, no bubbles) for 40 minutes. Do not boil. To check: insert a knife into the thigh — juices should run clear and the meat should be just cooked through.

  4. Immediately lift the chicken from the broth (careful — it's fragile) and plunge into a large bowl of ice water. Rest 10 minutes. This gels the skin and stops the cooking. Reserve the broth.

  5. Skim 3 tbsp of the yellow chicken fat from the top of the reserved broth for the rice. Reserve 600ml of the broth for cooking the rice and another 600ml for serving.

  6. Warm the chicken fat and oil in a rice cooker pot or heavy saucepan. Cook garlic and ginger 60 seconds. Add rice and toast 2 minutes. Add 600ml chicken broth, salt and pandan leaves. Bring to a simmer, cover, cook 15 minutes over the lowest heat (or use rice cooker), then rest covered another 10 minutes.

  7. Chili: blend all chili sauce ingredients to a smooth sauce. Ginger-scallion: combine ginger, scallion and salt in a heatproof bowl; heat 60ml oil until just smoking and pour over the aromatics — they will sizzle. Dark soy: simply pour into a small dish.

  8. Chop the poached chicken into serving pieces with a heavy cleaver (Cantonese chop-style, through the bone). Arrange on a platter over cucumber slices. Serve with rice (moulded in a bowl and unmoulded onto the plate), a small bowl of hot broth with spring onion and coriander, and three small dishes of the sauces. Diners assemble each bite: rice + chicken + dip.

Tips

  • Bare simmer, never boil. 80C is the target. Boiling makes the chicken rubbery and cloudy the broth. Silky poached chicken is the whole point.
  • Ice bath immediately. This gels the skin into the classical translucent-jelly texture. Skipping this step gives you dry, rubbery skin.
  • Rice in the broth, cooked in chicken fat. Do not use plain water. The rice is half the dish; it must taste of the chicken.
  • Three sauces on the side. Not one. Every hawker Hainanese chicken rice comes with dark soy, ginger-scallion, and chili — never combined into a single sauce. Provide all three.
  • Fresh coriander in the broth. A small bowl of hot broth on the side with coriander and spring onion is essential. Do not skip.
