The story

Brigadeiro is the Brazilian children's-birthday-party sweet, and secretly also the adult-dinner-party dessert, and also the after-school snack, and also the office bake-sale bestseller. Sweetened condensed milk cooked over low heat with cocoa powder and butter until it thickens into a glossy fudge, cooled, rolled into small balls with buttered hands, coated in chocolate sprinkles (or coconut, or crushed pistachios, or pretty much anything you like). Served in small pleated paper cups. Nobody has just one.

Method

  1. In a heavy-bottomed non-stick saucepan, whisk together the condensed milk, sifted cocoa powder, butter and salt until smooth and lump-free.

  2. Place over low-medium heat and cook, stirring constantly with a silicone spatula, for 10 to 12 minutes. The mixture will thicken, darken and start to pull away from the bottom of the pan as you stir.

  3. Drag the spatula through the middle of the pan; the mixture should hold its shape for a moment before slowly filling the gap. If it fills instantly, cook another minute. If it stays split, you've slightly overcooked (still fine, just firmer).

  4. Grease a plate lightly with butter. Tip the mixture onto the plate, spread flat with a spatula, and leave to cool completely at room temperature, about 30 minutes. Don't refrigerate; brigadeiros go rock-hard cold.

  5. Grease your hands lightly with butter. Pinch off small pieces (about a teaspoon each) and roll into balls between your palms.

  6. Roll each ball in the chocolate sprinkles, pressing gently so they stick.

  7. Set each brigadeiro into a small pleated paper cup and arrange on a plate. Best eaten the day of; keep at room temperature.

Tips

  • Non-stick pan, silicone spatula, low heat. The mixture catches easily and turns bitter if it burns. A heavy-bottomed non-stick pan and a spatula that scrapes the corners are non-negotiable.
  • The test is the drag. When you can drag a line through the middle of the pan and see the base of the pan for a beat before the mixture fills back in, it's done. Cook to this point and stop.
  • Cool at room temperature, never in the fridge. Cold brigadeiro is impossible to roll (it turns to rubber). Give it 30 minutes on a greased plate at room temperature and it will be perfect.
  • Butter your hands. The mixture is sticky. Rub a small amount of soft butter on your palms before rolling and top up as needed.
  • Chocolate granulado, not sugar sprinkles. Brazilian chocolate sprinkles are made with cocoa (not just sugar and food colouring) and taste completely different. Sold at Brazilian and Portuguese grocers.
