Chef Ploy takes a carbon-steel wok to smoking heat, tosses a batch of pad kaphrao and shows why the domestic kitchen can never quite match the street.

This is the difference. Home stove, one point five kilowatts. Street stove, this — twenty kilowatts of jet flame. The wok gets angry. When I add the oil it smokes on contact. That smoke is the flavour we call wok hei — wok breath.
