Hanoi, Vietnam
60 years of experience
Her broth recipe has never been written down, only passed by taste.
Their Story
At 78 years old, Bà Hai (Grandmother Hai) has been making pho for longer than most of her customers have been alive. Her tiny shop in Hanoi's Old Quarter opens at 5am and closes when the last bowl is served - usually by noon, as she sells out every single day.
The secret to her pho? A broth that simmers for 24 hours, made with beef bones, star anise, cinnamon, and a blend of spices she refuses to reveal. "My mother taught me by taste, not by recipe," she explains. "I taught my daughter the same way. The recipe lives in our tongues."
Her pho has attracted visitors from around the world, including Anthony Bourdain, who called it "the most soulful bowl of pho I've ever tasted." Despite her fame, Bà Hai has refused every offer to expand or franchise. "One shop, one pot, one family," she says firmly.
