Route notes

Begin beneath the honey-white walls of Iglesia Santo Domingo. As the city begins to cool, the streets slowly come alive with the sounds and aromas of the evening ahead. It's the perfect place to step into the culinary heart of Peru's White City.
Tastemaker’s notes
“Almost every historic building in Arequipa is carved from volcanic stone.”
Start strong with crisp picarones. Fresh from the fryer, they're drizzled with warm spiced syrup while still piping hot. Crisp at the edges, soft in the middle, they're one of Peru's great street food classics.
You’ll try
Peruvian beignet
Tastemaker’s notes
“Picarones have been sweetening Peruvian streets since colonial times.”
Produce piled high. Vendors call across crowded aisles. Knives tap chopping boards. Locals stop for a bite and catch up over food. Beneath ironwork attributed to the workshop of Gustave Eiffel, Mercado San Camilo has been the beating heart of Arequipa's food scene for generations.
Tastemaker’s notes
“The best way to understand a city is to visit its market.”
Stop at a generations-old queso helado vendor. Churned the traditional way. Rich, creamy and finished with a dusting of cinnamon. Some things don't need improving.
You’ll try
Queso helado
Tastemaker’s notes
“Despite the name, there's not a gram of cheese in it.”
