Route notes

Tours are subject to change depending on vendor opening hours, time of year and other factors.

1

Start with a refreshing cup of cascara, brewed from the dried skins and pulp of coffee cherries. Communities in Ethiopia and Yemen have steeped the husks for centuries, making use of more of the precious coffee harvest and producing a light, gently fruity drink.

You’ll try

Cascara coffee cherry tea

Tastemaker’s notes

“Cascara comes from the fruit surrounding the coffee bean, rather than the bean itself.”

2

Settle in for a hearty Ethiopian breakfast spread: stewed special foul, buttery dirkosh fir fir made with dried injera, and chechebsa, torn flatbread tossed with spiced butter and egg, sweetened with honey. Scoop everything up with fermented injera and wash it down with fragrant, spiced shai tea.

You’ll try

Stewed fava beansDried injera stew with butterFlatbread spiced butter and egg

Tastemaker’s notes

“Injera is the cornerstone of the Ethiopia's table, it's bread, plate and eating utensil rolled into one.”

3

Try two Ethiopian crowd-pleasers. Cool, tangy ergo, a traditionally fermented yoghurt scented with aromatic tena adam (Ethiopian rue), followed by pasti, Ethiopia's answer to the beignet, fried until golden and rolled generously in sugar.

You’ll try

Ergo yogurt with spicesEthiopian pasti beignets

Tastemaker’s notes

“Ergo is traditionally fermented for days, with recipes varying from community to community.”

4

Make a pit stop at a neighbourhood bakery known for its pastries, freshly baked and fried treats. A sweet reminder of the Italian influence that left its mark on Ethiopia's baking culture.

You’ll try

Mixed pastries

Tastemaker’s notes

“Italian occupation helped introduce European-style cafés and pastries to Ethiopia's urban food culture.”
